Paul aka ArcaneX has come up with compelling evidence to prove the gun that Vincent used is a Western Arms Strayer-Voigt (SV) Infinity. (Actual real steel gun: Strayer-Voigt Infinity).
His evidence:
It has no markings on the barrel (as animated), unlike the other pistols featured. It features a long, 6" barrel unlike the other pistols featured here (the barrel animated is fairly long in length). It holds 30 rounds of ammunition which would explain his ability to fire so many rounds without having to reload on the train until later. (There is also a 15 round model which looks exactly the same). It's a spot on look alike of the pistol animated (at least I think so :D)
IMHO, the clincher is the trigger of the Infinity which is spot-on for the cap I took below. No other gun has a similar, distinctive trigger as the Infinity pistol so my money is with Paul assertion.

Despite being ex-military the fugitive bounty Vincent packs a custom pistol instead of the tried, proven milspec weapons. Odd choice but I guess his background would enable him to make the best of the Infinity's limited magazine capacity in a firefight.

His gun is indeed a Strayer-Voigt Infinity. It is not, however, made by Western Arms. At least, not as a regular pistol, seeing as Western Arms makes BB guns!

Killjoy gives a compelling reason for Vincent's decision to go for the SV Infinity:
"Just a minor note on Vincent's gun, the Strayer Voigt longslide. While magazines are available that hold 30 rounds (like you mentioned) they project from the bottom of the grip signifigantly; imagine the magazine being about twice as long. They're pretty much used for specialized competition shooting. 15 rounds though is about on par with most of the 9s though (Spike's 941, for example) and being ex-special forces, I could well see Vincent appreciating both the exceptional stopping power that the .45 round offers and the exceptional accuracy of the custom guns."
